Farmer's maroilles with raw milk
The bouquet of the orange rind of Maroilles can be deceptive: the flavor of the cheese is much softer and finer than its smell.
In the mouth, Maroilles has a melting texture and a milky taste (hot milk), with notes of hazelnut, all slightly salty. The slight traces of bitterness and acidity that its rind gives it give it relief. Ripened as it is here, its flavor is clearer and more typical than a young Maroilles.
As with all cheeses, it is important to consume it at room temperature in order to appreciate all its nuances of flavor.
