These wines are characterised by freshness, finesse and balance. Their very diversity is a reflection of the exceptional terroir of the Terrasses du Larzac.For the reds, the diversity of the grape varieties makes it possible to elaborate a range of wines presenting, according to the vintages, aromas of red fruits, floral touches or notes of garrigue. The tannins, which guarantee the good longevity of the wines, are present without excess.
The Plan de l'Homme plots - about ten hectares in all - Our grape varieties: 40 years old, Grenache, Carignan, Cinsault, Syrah.
Yields are limited (on average 25 to 30 hl/ha), due to the age of the vines, the poor soil and the harsh climate.
Harvesting is done by hand.

Vinification
Destemmed and crushed grapes.
Maceration for 18 to 25 days.
Extraction by punching down, pumping over and delestage.
Tasting
Produced from old parcels of Carignan combined with the estate's Grenache, Khi is a fruity wine with supple tannins.
Accords
Ideal with red meat, game, lamb chops, cheese plates.
