Winemaking
Mechanical night harvest, cold pre-fermentation maceration (3-4 days at 12-15°C) for optimal aromatic extraction, followed by temperature-controlled alcoholic fermentation with extraction operations adjusted to release full potential (aromas, color, tannins). Half the wine aged 12 months in oak barrels.
Tasting notes
Colour: Carmine red color.
Nose: Fresh and aromatic nose, red and black fruits.
Mouth: Charming on the palate, with good substance.
Food pairing
It will ideally accompany beef, spiced dried duck breast, confit and Sarlat-style potatoes.
Serve at 16-18 °C
